Ingredients
  

  • 4-5 medium potatoes Russet or Yukon Gold, diced into 1-inch cubes
  • 1 medium onion finely diced
  • 4 cups milk whole milk preferred, or use almond/oat milk as a substitute
  • 3 tablespoons unsalted butter

Instructions
 

Prep Ingredients:

  • Peel and dice the potatoes into 1-inch cubes. Finely dice the onion. Set aside milk and butter.

Cook Potatoes and Onions:

  • Add diced potatoes and onions to a large pot. Cover with water and bring to a boil. Simmer for 10–15 minutes until potatoes are fork-tender.

Mash Potatoes:

  • Drain the water, leaving the potatoes and onions in the pot. Partially mash the mixture or blend for a smoother texture.

Add Milk and Butter:

  • Return the pot to low heat. Gradually add milk while stirring. Add butter and mix until fully melted and incorporated.

Season and Simmer:

  • Season with salt and pepper to taste. Let simmer for 5 minutes.

Serve:

  • Serve hot, optionally garnished with shredded cheese, chives, or croutons.

Notes

For a vegan version, replace milk with almond or oat milk and butter with plant-based alternatives.
To thicken the soup, mash more potatoes or simmer longer. To thin, add more milk.
